They are some of the most moving meals we cook, and the reason is simple: nobody is performing. There's no programme to get through, no running order, no audience. There's just a long-overdue reason to sit everyone down together and feed them like it matters.

A milestone is a strange and lovely thing to cater. A sixtieth, a fortieth, a golden wedding anniversary, the last day of a long working life — these are occasions weighted with years. People travel for them. Faces appear who haven't been in the same room since the last big one. There's often a quiet undertow of feeling beneath the laughter, the sense of a family taking stock of itself. You cook differently for that. A little more generously. A little more like you're cooking for your own.

Unlike a wedding, a milestone dinner usually has nowhere it needs to be. No ceremony to follow, no timeline imposed from outside. That freedom is the whole gift of it. The meal can take the evening it deserves — antipasti while people are still arriving and embracing, pasta when everyone's finally seated and settled, a main course that arrives exactly when the room is ready for it, dessert that nobody is rushing toward. We pace the food to the feeling in the room rather than to a clock, and a celebration that isn't watching the time has a warmth that a scheduled event can't fake.

The best milestone menus are personal. The dish someone's late mother used to make. The flavour that means a particular summer. The four desserts because nobody could agree and, on a night like this, why should they have to. We build the menu around the person at the heart of the celebration and the people who came for them — and we cook it on site, course by course, so that the food is part of the evening rather than something delivered to it.
