Weddings That Choose Their Own Scale
Not every couple wants the hundred-cover ballroom and the rolling timetable of speeches and cake-cuttings. Some want a long table in a room they can actually hear each other in. They want to look up from the plate and see their mother laughing and their oldest friend reaching for the wine. Around Loch Ness and Inverness, with the right house or lodge to yourselves and the water just outside, that kind of wedding becomes wholly possible — the rest of the world drops away up the glen, and what's left is the people who matter most and a very good dinner.
Nowhere to Hide
A large wedding has its own grandeur, and we love those nights too. But around a smaller table there is nowhere to hide and nothing to dress it up with. Every plate is seen properly. The chef can step out of the kitchen between courses without breaking the spell. The conversation moves as one conversation rather than twelve. That intimacy isn't a compromise on the cooking — it is the cooking, finally given the room to be the heart of the night. When dinner isn't competing with a function suite and a microphone, it can simply be the centre of everything, which is where we have always believed it belongs.
Cooking in the Highlands
The Highlands ask something particular of a travelling kitchen. Venues are remote, kitchens are borrowed, and the nearest anything is rarely close. That suits us. We bring the brigade and the kit, we learn the room in the first hour, and we cook a full menu on site — hand-made pasta and the best of the Highland and west-coast larder — in a lodge on the shore of the loch as though it were our own kitchen. The setting does half the work; our job is to make the food worthy of it.
An intimate wedding on Loch Ness is, in the end, a small number of people who love each other, one long table, and a meal cooked with complete attention. We can think of very few better reasons to bring the kitchen north.
