The Italian Banquet Company makes its pasta by hand, on site, on the day of your event. Not from a packet, not from a tray that came off a van that morning, not finished in a unit forty miles away and reheated in your venue. Rolled out, cut, filled and pinched closed by hand, in the kitchen of the place you've chosen, hours before it reaches the table. It is the single most honest thing we can tell you about how we cook, because there is no way to fake it.

Why By Hand

Fresh pasta is mostly time and attention, and both of those show up on the plate. A sheet rolled by hand has a texture a machine never quite gives you — it holds sauce differently, it has a bite that's tender without being soft. A parcel of tortelloni filled and sealed by hand sits a little irregular, a little alive, in a way the perfectly uniform factory version never does. You can taste the difference even if you couldn't say what you were tasting. The room always can.

On Site, On the Day

The reason most catered pasta disappoints is simple: it was made somewhere else, earlier, and has been waiting ever since. Pasta does not wait well. So we don't ask it to. We bring the flour, the eggs and the hands to your venue and we make it there, the same day, however remote the kitchen — a country house, a castle, a lodge at the end of a Highland track. By the time your guests are sitting down, there are neat rows of fresh pasta resting by the stove like a small army waiting to be called for. There is no shortcut for that. You either do it properly or you serve something else.

The Heart of the Menu

For us the pasta course is the centrepiece, and it always has been. It's the moment a meal stops being impressive and starts being personal — the dish people talk about afterwards, the one that tells them, more than any words on a menu, that real cooking happened here for them today. Everything else on the menu circles around it.

So when people ask what makes the food different, the truest answer isn't a region or a recipe. It's that someone stood in your kitchen and rolled it out by hand that morning, because that is the only way we know how to do it.
