An Italian Kitchen First
Everything traces back to an Italian kitchen and the unglamorous apprenticeship of doing things the long way: rolling pasta by hand until it stops being a task and becomes a feel in the fingers, learning that the best cooking is mostly good ingredients and the restraint to leave them alone. Emilia-Romagna — Modena, Bologna, the heartland of the food the rest of the world thinks of as simply 'Italian' — teaches a cook that a meal is not a performance you put on for guests but a kind of hospitality you owe them. That idea is still the whole foundation of how the company cooks.
From Private Chef to a Travelling Brigade
For years the work was private and personal — cooking in people's homes and holiday houses, residencies where you move in for a week and become, for a while, the kitchen of the house. Word travels the way it always has with food: someone eats well, and tells someone else. The bookings grew. The events grew. A dinner for a family became a celebration for thirty, then a wedding for many more — and one pair of hands became a full chef's brigade, with kitchen support and front-of-house, capable of cooking a complete menu on site at a country house or a remote Highland lodge.
That growth is where The Italian Banquet Company came from. The name changed and the scale changed, but the thing at the centre never did: a chef who'd rather cook in your kitchen, on the day, than send food in from somewhere else. Some of the people who book us now were there in the private-chef years — they've come along for the whole journey, which is the kind of loyalty you can only earn at the table.
Why It Still Feels Personal
A bigger operation can lose the thing that made it worth growing. We've worked hard not to. Giuseppe still leads the cooking. The pasta is still made by hand. A booking is still, fundamentally, a chef coming to feed your people as if they were his own — only now with a brigade behind him and a decade of weddings, residencies and celebrations across Scotland in his hands.
